Bean Chilli (serves 4)
This recipe provides just over two of your five fruit and veggies a day. It’s vegetarian, can be served with rice, pasta, a jacket potato or even in a wrap. It costs £1.60 per portion and is super versatile and delicious.
Method
Scrub and prick your potatoes. Pop in the microwave on high for 10 minutes. Then leave to stand aside (alternatively you can serve with with rice, pasta or couscous).
Put the onion, garlic and butter in a microwaveable bowl, give it a quick stir, then microwave on high for 1 minutes.
Add in the spices, chopped tomatoes, beans, sweetcorn, carrots, crumble in the stock cube and cook for 5 mins on high. Stir well and leave to stand with a lid on top.
Reheat your potatoes for 2 to 3 minutes. Pop the chilli on top of the potato. Add grated cheese or Greek yoghurt if you like.
