We do not live by bread alone

Hello Maggie and welcome to Soul Food, a delivery of nourishment to your inbox six days a week throughout the season of Lent.


Lent starts on Wednesday, but to ensure you have a full week’s worth of content we’re starting the daily emails today.


Each week we’ll be sharing a recipe video, a Bible study, a craft activity, a justice conversation, a music reflection, and a wrap up video - all leading up to the Sunday ahead. If you’re using the Soul Food worship materials on Sundays, you’ll find some of the things throughout the week are familiar - that’s because they all connect up with the same weekly theme from Monday to Sunday. We’ll tell you about each weekly theme every Monday, and you can also find a full list of the themes on our website: methodist.org.uk/SoulFood.


Every Monday from now up to Holy Week we’ll be bringing you a video from Priya Tew, an award winning dietitian, who will share a recipe made with easily available ingredients. We encourage you to cook and share this with your community – perhaps as a Sunday meal after church!

 

Bean Chilli (serves 4)

This recipe provides just over two of your five fruit and veggies a day. It’s vegetarian, can be served with rice, pasta, a jacket potato or even in a wrap. It costs £1.60 per portion and is super versatile and delicious.


Method

Scrub and prick your potatoes. Pop in the microwave on high for 10 minutes. Then leave to stand aside (alternatively you can serve with with rice, pasta or couscous).


Put the onion, garlic and butter in a microwaveable bowl, give it a quick stir, then microwave on high for 1 minutes.


Add in the spices, chopped tomatoes, beans, sweetcorn, carrots, crumble in the stock cube and cook for 5 mins on high. Stir well and leave to stand with a lid on top.


Reheat your potatoes for 2 to 3 minutes. Pop the chilli on top of the potato. Add grated cheese or Greek yoghurt if you like.

Ingredients

4 potatoes

1 medium onion, finely chopped

3 garlic cloves, crushed

Knob of margarine/butter

1 tsp ground cumin

1 tsp paprika  

Pinch of chilli powder (optional)

2 x 400g tin of chopped tomatoes, drained and juice reserved

2 x 400g tin of mixed or any form of beans drained and rinsed (eg kidney, black beans, cannellini beans, mixed beans)

1 325g tin of sweetcorn, drained

1 vegetable stock cube, crumbled

Greek or natural yoghurt to serve (optional)

Grated cheese to serve (optional)
