Chickpea stir fry (serves 4)
This vegetarian dish serves four and provides a super healthy three of your five fruit and veggies a day.
Method
Heat the oil in a wok. Cook the onion and garlic, until the onion is soft and then add the ginger.
Stir in the broccoli and peppers (or frozen vegetables).
Add in the soy sauce, water and Chinese 5 spice, plus the chilli if you wish. Let it simmer for a few minutes.
Finish by adding the chickpeas and giving it a good stir through.
Serve with rice or noodles, topped with spring onions if you have them.
